1/2 c. Sugar
1/2 c. 10x Sugar
1/4 c. Flour
1/8 tsp. Salt
8 oz. Almond Paste
2 Medium Egg Whites
Pine Nuts
10x Sugar for Dusting

Directions:
Directions:
Preheat oven to 300º.
Line 2 cookie sheets with parchment paper. Sift the granulated sugar and the 10 x sugar together with the flour and salt. Set aside. Break up almond paste into small pieces, add egg whites and beat well until smooth. Add the flour - sugar mixture and mix well. Roll small amount of dough into ball about the size of a walnut. Place on cookie sheet, press down. Place 3 pine nuts on each cookie. Bake for 20 to 25 minutes. Remove from cookie sheet and place on wire rack to dry and cool. Place in airtight container to mellow, 2 or 3 days. Before serving, dust with 10x sugar.
Makes 24 to 30 cookies.

I have made these cookies for many years. As they mellow, they taste even better. Our family enjoys them and they do not stay around very long in our house.
