• 1/2 cup dried chickpeas (or 1 15-oz can)
• 1 1/2 TB lemon juice
• 1/4 cup water
• 2 TB extra-virgin olive oil
• 3-4 cloves garlic
• 1 tsp kosher salt (or 1/2t table salt)
• 1/2 tsp ground cumin
• 1/2 tsp ground coriander
• 1 heaping tablespoon spicy red pepper paste (we get the Tamek brand from World Harvest)
• 1 TB minced fresh cilantro or parsley

Add liquids to a blender or food processor, blend, then add garlic and spices and blend again. Finally, add chickpeas a little at a time until creamy.

I adapted this from a Cooks Illustrated recipe because I'm allergic to the tahini paste that's in most hummus. Then we tweaked it some more for good measure. :)
