1 can (l4-3/4 oz) pink salmon, drained,
bones and skin removed
1 cup evaporated milk, divided
1-1/2 cups cornflake crumbs, divided
1/4 cup dill pickle relish
1/4 cup finely chopped celery
2 tbsp finely chopped onion
Canola Oil for deep-frying

TARTER SAUCE
2/3 cup evaporated milk
1/4 cup mayonnaise
2 tbsp dill pickle relish
1 tbsp finely chopped onion

Directions:

In a medium bowl, combine salmon, 1/2 cup milk, 1/2 cup crumbs, relish , celery ,and onion; mix well. With wet hands, shape 1/4 cupfuls in cones. Dip in remaining milk, then into remain crumbs. Heat oil in a deep-fat fryer to 365. Fry croquettes. a few at a time, for 2 to 2-1/2 minutes or until golden brn. Drain on paper towels, keep warm combine tarter sauce ingredients in a medium saucepan; cook over medium-low heat until heated through and slightly thickened. Serve warm with croquettes.

Nana always made Salmon Croquettes when I was growing up I loved them. Papa did not, and you cook what your family likes. Try them, I like the tarter sauce cold instead of hot.. Good for you
and very reasonable dinner. Serve with mashed potatoes and broccoli.
