3 1/2 cups flour,
2 cups pumpkin,
2 t soda,
1 1/2 t salt,
1 t cinnamon,
1 t. nutmeg
1/2 cup nuts,
1 cup canola oil,
4 eggs,
2/3 cup water,
3 cups sugar,
1 cup coconut

Directions:
Directions:
Sift dry ingredients. Make well in middle of mixture, add pumpkin, eggs, oil, and water. Mix well.
Grease and flour 3 small loaf pans. Fill evenly.
Bake 350 for 1 hour. Cool Completely. Wrap in foil securely. Can be frozen.
If you like, add more nuts!

My Mom made this every holiday season and became my family's favorite also. Can be served with whipping cream or butter.
Hot coffee and a slice of pumpkin bread on a cold morning--nothing better!
