--1 salmon steak (the kind that's been cut crosswise, not lengthwise) - these are usually large enough for 2 people each
--butter
--salt
--olive oil

--Preheat oven to 375º F

--Lightly grease the bottom of a glass pyrex baking dish with a thin coating of olive oil.
--Soften 1/2 to 1 stick of butter (depending on the size of the steak) in the microwave, until it's malleable
--In a small bowl, mix butter and salt to taste. The end result is meant to be pretty salty, though the main point is a simple way of cooking a moist salmon steak with a little pique.
--Pat or brush the salmon steak with the butter/salt mixture on both sides, covering all of it.
--Put into the fully heated oven. Total cooking time should be about 45 minutes - until the fish is flaky and the insides are pink instead of red when tested with a fork. Important: halfway through the cooking time, TURN the fish over. Ideally, the skin on the bottom will get crispy, adding to the juices.


This goes well with (I always say this) light sides like green vegetables, rice, pilaf, green beans, etc. I've found this to be a reliable way of getting a flavorable and moist simple salmon steak without resorting to a heavy spice marinade, and it's easier to keep from overcooking.

I got the idea for this from /The Joy of Cooking/, and then altered the given amounts of salt and butter to suit my tastes. I've gotten good reviews with this recipe as well - I hope someone tries it and enjoys!
