variety of chopped veggies on hand (peppers, tomatoes, onions, spinach, pre-cooked potatoes, etc)
6-8 eggs, beaten
generous splash of milk or cream
salt and pepper
cheese of choice (cheddar, swiss, parmesan, etc)

Directions:
Directions:
Lightly saute veggies in heavy skillet in good amount of olive oil or butter until soft. Preheat oven broiler. Beat eggs and milk/cream together, season with salt and pepper. Pour over veggies in skillet, cook until eggs are set. Sprinkle with cheese. Put under broiler for few minutes until eggs are cooked and top is brown. Watch carefully as this step is quick. Remove from oven and let sit for a few minute before inverting onto clean cutting board. Cut into wedges. Great served hot, warm, or cold.
