Step 1:
1 lb. ground Italian sausage, mild or hot depending on your tastes
Olive oil
1/2 onion sliced into rings
Celery, 2 ribs
Garlic, 1 clove, minced
Step 2:
2 Quarts Chicken Broth
1 can rotel
Pinch Oregano
Pinch Basil
1 red bell pepper
Frozen green beans
Frozen spinach

Directions:
Directions:
Step 1: Saute`e the sausage in a Tbsp. or two of oil in a stockpot. Add onion, celery, and garlic, cook until lightly browned.
Step 2:
Add to stockpot all items in step 2 ingredients. Bring to a boil and reduce heat and simmer for 4 hours or more. Serve with lots of grated fresh Parmesan cheese.
