1 lb. lean ground beef
Salt and pepper
2 cups Cheddar Cheese, grated or sliced
1/4 cup chopped onion (optional)
2 cups of leftover homemade chili
OR
1 (16 oz.) can of chili without beans

Directions:
Directions:
Form the hamburger meat into four patties; lightly salt and pepper. Heat skillet to medium high, and fry hamburger steaks until they are rare but browned on both sides. Remove from pan and keep warm. In a saucepan, warm chili over medium heat. Place cooked hamburger steaks on an oven-proof plate or pan, top with cheese, and heat in the oven or microwave until the cheese is slightly melted. Remove from oven, top with chili and onions (optional) and serve.

Dad liked to make these for the kids when I was out of town. This dish is said to take its name from the "hamburger size" ladle that legendary Los Angeles chili parlor proprietor Ptomaine Tommy used decades ago to spoon chili over the open-face burgers he served.
