3lb whole beef tenderloin, 14 slices provalonie cheese 1 red onion, 1 publano chilli pepper, 6 cooking strings, 3 sm bambo scewers, cooking logs, mushrooms, mayo, 2-chipolte peppers, sweet paparika, 3-6" sourdoe hogies

3-onion lollypops,coat both sides in evo,salt and pepper,grill for till browned,trim silver skin off top of meat,cut pocket all the way down,open up salt and pepper,place 7 pieces of cheese evenly,place onion slivers on cheese,make ten thin strips of pepper,place on onions,put 7 more pices of cheese on top,close the meat,tie up with strings,brush compleatly with evo salt and pepper,cook for 5 mins each side rotate 1/4 turn 4 turns 20 min total, will look blackend, pull off let set for 10 mins,cut in 1/4chunk/strips,chipolte mayo sauted mushrooms,(chipolte-mayo) 1/2 cup mayo 1-2 canned chipolte peppers,minced,1 table spoon of their adobo sauce,1/2 tea spoon of sweet paparika, combine whisk fridge for 2 hours,put sandwitch together warm in microwave for 15 seconds
