3 c. grated zucchini
3 c. sugar
1 c. oil
4 eggs
1 t. vanilla
3 c. flour
2 t. baking powder
1 t. soda
1 1/2 t. cinnamon
1 c. nuts
Directions:
Directions:
Mix together zucchini, sugar, oil, eggs and vanilla. Beat well. Combine dry ingredients and add to first mixture, blending well. Stir in nuts. Bake in greased 9 X 13 pan at 350º for 50 - 55 minutes.
