4 lbs. venison or lean ground beef
1 c. water
3/4 tsp. onion powder
3/4 tsp. garlic powder
1 1/2 tsp. mustard seed
1 1/2 tsp. ground peppercorns
1 1/2 T. liquid smoke
5 T. Morton's Tender Quick salt
1 tsp. hickory salt

Mix all ingredients together in a large bowl. Divide into four equal parts. Shape each quarter into a roll shape. Wrap each in tin foil, shiny side out. Refrigerate 24 hrs. Leave wrapped securely in foil; Bake at 220º for 2 hrs. Best right out of the oven but can be serve cold.
