20 Medium asparagus spears, trimmed
1 lb assorted msuhrooms
1/4 cup olive oil
4 oz. mesclun greens
1 cup crumbled blue chese
1/4 c. toasted pecans, chopped
Red Chile-Mustard Vinaigrette (see recipe in Dressing)

preheat oven to 425º
Spread out the asparagus and mushrooms on separate baking sheets and drizzle each w/2 T. oil and season with s & p. Roast asparagas for 8-10 minutes, depending on size and roast mushroom until golden brown, about 20-25 minutes. let cool slightly.

combine mesclun greens and mushrooms, add dressing to just wet greens. mound mixture on plates and top with asparagus, drizzle a little more dressing, sprinkle with cheese and pecans.
