1 tub of refrigerator biscuits
8 oz. pork sausage
2 Tbsp. flour
1 tsp. dried thyme
1 small onion - diced
1 cup milk
1/2 tsp. salt
1/4 tsp. pepper
1 can petite diced tomatoes (but we couldn't find "petite, so we just diced the regular ones smaller)

1. Bake biscuits
2. Cook sausage in saucepan over med-high heat for 3-5 minutes until it's no longer pink. Add flour and thyme, cook for 4-6 minutes longer or until sausage is browned, stirring occasionally.
3. Add onion to saucepan, cook 2-3 minutes or until tender. Add milk, salt and pepper. Bring to a boil. Reduce heat to med. and simmer 2-4 minutes, stirring occasionally. Add tomatoes, cook 3-5 minutes or until gravy is thickened, stirring occasionally.
4. Serve over biscuits.

Love this one! Just tried it last week and wasn't sure about the tomato based gravy... but it was delicious. We did it for dinner and served it with scrambled eggs. Yummy!
