Mix all ingredients in a blender, stopping frequently to scrape down the sides. Mix well. Let it set for about 20 minutes. Using a 1/4 cup ladle, pour onto a hot crepe pan the has been sprayed with cooking spray. Rotate the pan to thin out the crepe, cook until the top is dry,(a couple seconds),
turn over and cook on the other side. Place on a plate to cool and continue making until batter is gone.
Makes 3 dozen crepes.

We use these crepes when making homemade manicotti(see manicotti recipe). They can also be filled with chicken-a-la-king and baked in the oven until hot. Any leftover crepes that are not filled, can be rolled up into a thin tube, frozen and then cut into strips and used in soups.
