4 Russet potatoes
1/4 cup milk or cream
1/3 cup sour cream
1 Tbsp. chives, snipped
1/2 cup butter, divided
1-1/2 cup Cheddar cheese, shredded
2 slices bacon, cooked and crumbled
Salt and pepper

Directions:
Directions:
Grease and salt the outside of the potatoes and then bake at 400º for one hour, turning once. Remove from oven and slice each potato in half. Carefully scoop the whites into a bowl, leaving the skins intact. Drop 1/2 tsp. butter into each potato skin half, place on a greased sheet pan, and return to oven to crisp.

To the potatoes in the bowl, add milk, sour cream, half the cheese, and salt and pepper. Fluff as you would for mashed potatoes.

When the potato skins are crisped, remove from oven and fill each half with potato mixture. Top with remaining cheese, chives, and bacon crumbles. Return to oven until the cheese is melted.
