"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

Ingredients:
Ingredients:
1 tsp butter or margarine
1/2 c. diced red onion
1 clove garlic, minced
1-1/2 c. diced plum tomatoes (fresh)
3 tbsp ketchup
3 tbsp brown sugar
2 tbsp lime juice
2 tbsp Dijon mustard
1 tbsp chili powder
2 tsp Worcestershire sauce
1 tsp paprika
1/4 tsp ground cumin
1/4 tsp cayenne pepper
6 salmon steaks, about 6 oz each

Directions:
Directions:
Melt butter in a medium, non-stick saucepan over medium heat. Add onions and garlic. Cook and stir for 2 minutes, until onions begin to soften. Add all remaining ingredients except salmon. Mix well. Reduce heat to medium-low. Cover and simmer for 20 minutes. Transfer mixture to a blender or food processor and puree until smooth. Let cool.

Arrange salmon steaks in a single layer in a glass baking dish. Pour marinade over salmon. Turn pieces to coat both sides with marinade, or brush marinade all over salmon using a pastry brush. Cover and refrigerate for 1 hour.

Remove salmon from marinade and place on a baking sheet. Broil about 4 inches from heat source for 3 minutes. Carefully turn salmon over and broil for another 3 to 4 minutes, until done. Be careful not to overcook salmon, or it will be dry. Serve immediately.

Makes 6 servings
