1/4 tsp. salt

Beat all ingredients with a fork in a 1-quart casserole. If desired, stir in 1/4 cup shredded cheese, crumbled cooked bacon, or chopped mushrooms. Cover tightly and microwave on high (100%), stirring once a minute, until eggs are puffy and set but still moist, 3 or 4 minutes. Stir before serving. Recipe can be doubled and cooked for 6 to 8 minutes.
