½ c packed brown sugar
1 large egg, at room temperature
1/3 c milk
½ tsp vanilla
1 c flour
1 tsp baking powder
¼ tsp salt
½ tsp ground cinnamon
1 c shredded carrots
¼ c chopped walnuts

Prepare microwave basic yellow cake, except replace ½ cup granulated sugar with ½ cup brown sugar and add ½ teaspoon ground cinnamon, 1 cup shredded carrots, and ¼ cup chopped walnuts.
