1/2 to 1 head lettuce
1 pkg. crabmeat
1 C green grapes
2-3 stalks celery
lemon juice
almonds (optional)
1/8 C. mayonnaise

Directions:
Directions:
Place in a large cold bowl
Washed and chopped or cut lettuce ;
Add the following to the bowl
Washed and finely chopped celery
Rinsed crabmeat and broken into small chunks
Rinsed grapes
Toss together
Add mayo, lemon juice and almonds to personal taste preference
Toss again and place in fridge till very cold
Spoon salad onto large lettuce leaf
Serve with small croissants or crackers

When dad and I first began to date, I had not tasted a variety of seafood, which grandpa delivered weekly, so wanting to impress them, I tried a lot of different kinds of seafood and this became one of my favorites. Notice that amounts are not listed since it is different everytime. I try to use real lemon juice when I can but you can use the store bought kind. One way to keep fresh lemon juice is to squeeze the juice from fresh lemons when in season and put the juice in ice cube trays and you will have fresh lemon juice all year.
While I was pregnant with you, this was what I lived on since all meat made me nauseous. This salad, however, was always refreshing. Who knows what I would have eaten had Grandma not made this for me. Enjoy.
