7 large eggs (room temperature)
1 1/2 cups sugar
2 packets yeast or 1 solid yeast
1 1/2 cups Crisco shortening
5-6 cups flour, approximately

Directions:
Allow the eggs to come to room temperature. Place shortening in a pan and melt over low heat. Allow the shortening to cool. Dissolve yeast in 1/2 cup warm water and let it cool.

Beat 6 eggs and sugar together. Pour yeast into the egg and sugar mixture and mix well. Add the melted shortening and mix well. Add flour one cup at a time and mix. Continue to add flour until the dough forms a large ball. The dough should not be too sticky. Remove from the bowl and kneed on a floured surface about 5 minutes. Place the dough into a large bowl or plate and allow to rise at least one hour.

Preheat oven to 350º F. Roll pieces of dough into long ropes, then cut about 5 inch pieces and form a circle for each cookie. Place on a well greased cookie sheet and brush tops with beaten egg. Bake about 15 minutes. Tops of cookies should be golden brown.
