2 fresh turkey thighs or breast halves
1 cup whole grain brown rice
2 cups chicken or turkey broth
I cup of trinity mix (fresh diced onions, peppers, celery)
4 tablespoons minced garlic
2 tablespoons cumin
1 tablespoon poultry seasoning
1 teaspoon cayenne pepper

Directions:
Spray the inside of the crock with oil. Rinse and dry the turkey and put aside. Mix all other ingredients thoroughly and add to the crockpot. Lay the turkey pieces on top and sprinkle with cumin and, if desired, cayenne pepper. Cook for 4 hours on high or, even better, 7 hours on low. Remove the turkey from bones and serve with the rice, or chop the turkey and mix with the rice for a turkey bog dish.

I prefer turkey with skin and bones intact, and remove both before serving. I also prefer dark meat for more flavor and tenderness.Try substituting 8 skinless and boneless chicken thighs.
Recipe is for a 4 quart slow cooker.
