6 boneless chicken breast halves, thinly sliced
1/2 c. red onions, sliced
1/2 c. red bell pepper, sliced
1/2 c. tomato juice
chicken fajita or white chicken chili seasoning pkg.
1 c. salsa
French bread, sliced in half and then halved
2 c. cheddar cheese, shredded

Directions:
Directions:
1. Cook chicken until lightly browned, about 5 mins.
2. Stir in the sliced onions and red peppers and cook and stir for 5 mins. or until the vegetables are tender.
3. Stir in the tomato juice and seasoning packet and mix well. Cook mixture until the juice has thickened and the chicken is well coated with sauce, about an additional 7 mins.
4. Preheat the oven's broiler and set the oven rack about 6 in. from the heat source. Lightly toast bread, about 45 seconds.
5. Spread salsa over each slice of French bread. Evenly spoon the chicken mixture on top of the salsa. Sprinkle each sandwich with cheddar cheese.
6. Place sandwiches under the preheated broiler and cook for 5 mins. or until the cheese is melted and beginning to brown.
