2 1/2 lbs boneless, skinless chicken breasts
1/2 cup dry white wine
1/4 cup pesto sauce
4 tbsp butter

1. Season the chicken with salt and pepper and pound it lightly between sheets of waxed paper or plastic wrap to flatten to 1/2 in.
2. Heate a wide saute pan or skillet over med/heat and add about 1/4 cup oil.
3. When the oil starts to smoke add the chicken and saute for 6 to 7 min per side until just cooked through. Remove chicken and keep warm
4. Add wine to the pan and stir to scrape up the savory brown bits on the pan.
5. When the wine has reduced by half, add the pesto, then whisk in the butter, 1 tbsp at a time, to form a smooth sauce. Be sure to monitor the heat and remove as soon as the last butter is melted, to make sure the sauce doesn't break
6. Place a chicken breast on each of 4 plates and top with sauce
