1 can (19oz/540 ml) black beans, drained and rinsed
3 eggs
1/3 cup canola oil
2 tbsp vanilla extract
1 ¼ cups granulated sugar
½ cup unsweetened cocoa powder
1 ½ tsp baking powder

Directions:
Directions:
Preheat oven to 350 degrees.
In food processor or blender, puree beans (make sure they are drained and rinsed!!), eggs, oil and vanilla for 1-2 minutes until smooth.
In a large bowl, combine sugar, cocoa and baking powder. Pour in bean mixture and stir until smooth.
Pour batter into greased 9” square baking pan. Bake in preheated oven for 30 minutes or until toothpick inserted in the center comes out clean. Cool completely in pan. Can be iced or sprinkled with icing sugar.
