1 Rotisserie Chicken (deboned and shredded)
1 onion diced and sautéed with salt/pepper (may add garlic if desired)
2 cups shredded cheese (reserve 1/2 cup)
1 large can green or red enchilada sauce
1 can cream of chicken soup
20-24 tortillas (softened in hot oil - makes easier for folding)

Directions:

Combine all ingredients except 1/2 cup cheese and 1 cup sauce. Fill each tortilla with about 3 tbs filling. Place in 9x13 pan. Cover with 1 cup sauce and 1/2 cup cheese. Bake covered at 350 for 30 min then uncover and bake for an additional 10-15 min.
