1 large sugar pumpkin (hard to find, might look at farmer's market)
1 small sugar pumpkin
2 Tbsp. melted margarine
1 cup chopped onion
1/2 cup chopped celery
1/2 cup chopped carrots
1 cup fresh diced tomato
4 cups of chicken or vegetable broth
1/4 cup uncooked rice

Directions:
*Great for special occasions, such as Halloween or Thanksgiving. Carve top and clean inside pumpkin. Cut one smaller sugar pumpkin meat into cubes. Coat inside pumpkins with melted margarine and sprinkle inside with salt and pepper. Bake in 400 oven for 20 minutes. Sauté onion, carrots, celery, and diced tomatoes in olive oil in 2 quart pan. Add chicken or vegetable broth and bring to boil. Put uncooked rice in pumpkin and pour vegetables with broth on top. Salt and pepper to taste. Return to oven with lid on top. Bake about 60 minutes or until pumpkin is tender, but not too soft. Put pumpkin on platter and serve using pumpkin as a soup tureen. Very festive for fall!
Serve with zucchini bread or something hearty and crusty!
