1 small chopped onion
1/2 cup chopped red pepper
4 cups packed spinach
1 pkg Stove Top Stuffing
2 tbsp parsley
6 eggs
1/2 cup shredded cheese
Directions:
Directions:
Saute onion and pepper for about 5 minutes. Add spinach and set aside. Prepare stuffing mix, stir in onion, pepper and parsley. Beat eggs, mix with stuffing. Pour into 8 inch pan and sprinkle with cheese. Bake for 35 minutes at 350 degrees.
