1 9in pie crust (top and bottom crust)
2 cups rhubarb (cut into 1/4 in pieces)
2 cups strawberries (sliced)
1/2 cup instant tapioca
1/8 tsp salt
2 tbsp chopped butter
2 tbsp milk or cream
1 tbsp sugar mixed with 1/4 tsp cinnamon

1. Preheat oven to 425º
2. Place bottom crust in the pie plate
3. Combine tapioca, sugar, and salt in bowl, then add rhubarb and strawberries until both are evenly coated with sugar mixture
4. Pour filling into bottom crust
5. Scatter butter on top of filling
6. Place top crust on pie and crimp edges, you can lattice top as well
7. Brush top of pie with milk or cream and sprinkle with cinnamon sugar
8. Make slits in top of pie, if not latticed
9. Bake for 10mins. Then reduce heat to 350º and bake an additional 40-45min until browned and filling is bubbling
