Directions:Heat oven to 400º In a hot skillet, brown and stir ground beef, onion and garlic; Drain off grease Stir in seasoning mix Spread beef mixture in a pie dish Sprinkle with chilies and cheese Beat remaining ingredients until smooth and pour into pie plate Bake until golden brown and a knife inserted halfway between the center and the edges comes out clean. Bake about 25 to 30 min. Allow to stand at room temp for about 5 minutes Garnish with extra peppers and shredded cheese. |

Notes: This isn't a "recipe" as much as it is a "recipe concept" that can be a"leftover lifesaver". I know, I know. No one likes leftovers, right? Well this recipe might just change your mind. What I like about this is that it is thrifty, incredibly easy, fast and forgiving while utilizing whatever you've on hand in combination with three other items would likely have in the fridge or pantry: Bisquick, milk and eggs. Of course, spray the container with Pam first. If you Google "recipes for Bisquick Impossible Pie" you will find about 700 variations. So you can easily get the concept and create the "Impossible Pie" using what you have from yesterday's meal. OK, what if you don't have milk? Here's the "forgiving" part. Do you have cream? Half and Half. Canned evaporated milk in the pantry? Combination of any of the above? It all works! Not enough eggs? Make a smaller amount the dough part and more meat vegetables and cheese. It will be great! You can adjust it up or down in size and proportion so that there are no leftovers - again! However, this is great heated in the microwave for lunchtime next day. Really! Just ask True and his friends. Yes, I make this for guests and they LOVE it! Uncle True's favorite is when I use leftover grilled sausages cut into chunks in combination with onions and peppers (which were sautéed as a sandwich topping the day before). When you refrigerate the onions and peppers there will be liquid in the leftover part. I combine that tasty liquid with cream or milk AND the eggs and Bisquick (just get the approximate proportions worked out)....even better! There is that forgiving and creative part. So when people ask me for the recipe, I honestly can tell you it is different every time. By the way, I almost always add some kind of cheese because every Wisconsin girl knows cheese makes everything taste better!!!! By the way, a pie pan works. A square pan works (but the center will take longer to bake). Use whatever you have in the size suited to the leftovers and number of people you have to feed. Even the temperature and time can be slowed down a bit to hold or speed up a bit to hurry....don't be afraid to experiment. Just add a salad or a piece of fruit and you have a great restaurant-quality meal with little time and effort. This is a real bonus for busy working newlyweds!
