Thin Sauce:
1 T. oil
1 tsp. to 1 T. sifted flour
1/2 tsp. salt
1 cup milk

Medium Sauce:
2 T. oil
2 T. sifted flour
1/2 tsp. salt
1 cup milk

Thick:
4 T. oil
4-6 T. sifted flour
1/2 tsp. salt
1 cup milk

Directions:
Directions:
Heat fat, add flour and salt and stir until smooth. Do not brown. Add milk and cook, stirring constantly until it boils.

Use thin sauce for cream soups, macaroni and cheese, etc.

Medium sauce is good for meat, fish, and vegetables.

Thick sauce is good for cutlets, croquettes and chicken-fried steak.
