Ingredients: firm ripe tomatoes pepper or seasoning of your choice mayonnaise or Miracle Whip cheese (any preference, I use old cheddar)

Directions:Cut tomatoes in half and place in pam sprayed (for easier clean up later) casserole dish, or cookie tray. One half tomato per person (men tend to want more so I always throw in extra - great cold the next day!) Sprinkle with lots of pepper or seasoning (I use Montreal Steak pepper and vegetable seasoning). Put one tbsp of miracle whip in centre of tomato and a generous thick slice of cheese - try not to have it hang over the tomato, or else it ends up on the pan. Bake at 350 degrees for 20 minutes or depends on size of tomato. *HINT: I have learned to put these in 45 minutes before we sit down with guests, and then just before you pour their wine turn oven to 400 degrees and then add the cheese last---this saves it from running all over the pan. DO NOT FORGET THEM, SERVE THEM LAST ON THEIR PLATES, AND EVERYONE IS SO IMPRESSED!!!! These are always a hit and are so delicious and easy. |

Notes: These baked tomatoes are good with absolutely anything, and always a hit because they are so delicious and just colourful. And if you want, you can slice the tomatoes all up and layer this in a casserole dish. Just layer sliced tomatoes, seasonings, miracle whip, and then cheese. Enjoy the colour and the taste!
