2 cups orange juice
1 cup pineapple juice
2 tbsp orange zest
2 tbsp minced ginger
2 tbsp minced garlic
2 tbsp minced green onion
1 tbsp sesame oil
1/2 cups low-sodium soy sauce
1/2 cup mirin (sweet rice wine)
1 cup sugar
1 1/2 tsp crushed red pepper flakes
approx. 4 pork chops (or 12 chicken drumsticks)
2 tbsp creole essence
2 tsp salt
2 tbsp chopped cilantro
1 tbsp toasted sesame seeds

Creole Essence (makes more than you need):
2 1/2 tbsp paprika
2 tbsp salt
2 tbsp garlic powder
1 tbsp pepper
1 tbsp onion powder
1 tbsp cayenne pepper
1 tbsp dried oregano
1 tbsp thyme

Directions:
Preheat oven to 375 degrees. Saute juices, zest, garlic, ginger, onion, sesame oil, soy, mirin, sugar, and pepper flakes over medium-high heat. Bring to boil and stir occasionally until sugar dissolves and syrup-like (approx. 40 minutes). Season meat with essence and salt. Place on pan and drizzle liberally with glaze. Cook in oven until cooked through and carmelized (approx. 40 minutes). Garnish with cilantro and sesame seeds.

For the pineapple juice, I've used the juice from canned pineapple which I often have in the cupboard.
In place of the mirin, I've used rice vinegar.
