3 cups old fashioned oats
1 cup coarsely chopped nuts and/or seeds (pecans, walnuts, almonds, sunflower and pumpkin seeds are all delicious alone or combined)
1/2 cup (unsweetened) shredded coconut
3 tbsp packed brown sugar or maple syrup (optional)
1 tsp ground cinnamon
1/2 tsp ground ginger OR 1 tbsp finely chopped candied ginger
1/4 tsp salt

1/3 cup honey
2 tbsp vegetable oil
1/2 tbsp vanilla extract

1 cup dried fruit (again, go nuts with variety: cranberries, papaya, pineapple, banana, etc.)

Directions:

Preheat oven to 300 degrees
Line rimmed baking sheet with parchment.
Stir honey and oil in saucepan over medium-low heat until smooth. Add vanilla.
Mix first seven ingredients in large bowl. Pour honey mixture over oat mixture; toss. Spread on prepared sheet. Bake until golden, stirring every 10 minutes, about 40 minutes. Place sheet on rack. Stir granola; cool. Mix in fruit.
Serve with milk (hot or cold) or yogurt. Add fresh fruit as desired.

NB: Keeps nicely for a week in an airtight container.
Some favourite combinations:
- Tropic Thunder: mixed tropical dried fruit (papaya, pineapple, mango) and candied ginger
- Nova Scotia special: maple syrup, pecans, cranberries.
