1-1/2 Lbs of ground meat (combine beef pork and veal for best flavor),
1/2 cup golden raisins,
1/2 cup bread crumbs,
1/4 cup pignoli (pine) nuts,
1 egg,
1/2 cup grated Pecorino Romano or Parmigiana cheese,
1/2 cup chopped fresh of 2 Tbsps dried parsley,
1tsp dried oregano,
1/2 cup chopped fresh of 2 Tbsp dried basil,
1/4 cup finely chopped garlic,
Lots of fresh cracked pepper,
One slice of wet (with tap water)white bread

Directions:

Squeeze the water out of the white bread and break into small pieces in to mixture. Then,Everything gets mixed together with your hands!! (I often wear rubber gloves for mixing and shaping the meatballs). Put a little olive oil into a (preferably) cast iron fry pan and add meatballs one at a time with medium heat. The time to cook will depend on the size of the meatballs, turning with large spoon as each side gets brown. There may be some splatter if heat is too high, but resist putting lid on pan, lest you steam the meatballs. You may add these to tomato sauce or serve as they are.

I don't know what the wet white bread does in this recipe, but that's the way I learned to make them and always have. My Dad used to say it would help "bind" the ingredients.
