2 large Vidalia (sweet) onions
Frozen or canned in water artichoke hearts, about 20 (halved)
1 can Green, pitted olives
3-4 large fish filets, to create a layer in baking dish
about 1/4 cup olive oil
3-4 (to taste) mashed garlic cloves
salt and cracked pepper to taste
paprika
about 1/4 to 1/2 cup bread crumbs(if you like)

Spray cooking spray or put thin layer of olive oil in baking pan. Lay one layer of thickly sliced onion to cover bottom of pan. Lay fish filets over it in single layer. Mashed garlic and remainder of ingredients on top of fish. (sprinkle paprika for a little color only). Cover pan loosely with foil. Bake at 375-400º oven for 20-35 minutes, depending on thickness of fish filet used. If you like, some bread crumbs can be sprinkled on top before paprika. Take foil off pan and bake an additional 5 minutes to crisp toppings.

This recipe is great with a plain, thin filet, like flounder. Bass also tastes good, but allow for a little more cooking time because of thickness. The onion layer tip was given to me by Grandma Millie, my mother-in-law, as one she used in her restaurant to keep the fish from breaking apart during serving. It also adds a nice taste.
