1 cup precooked shredded potatoes
1 shallot finely chopped
1 Tbsp prepared horseradish
1 tsp dijon mustard
1/2 tsp garlic salt
1/4 tsp pepper
1 1/4 pound mahi mahi (skin removed, cut into 4 portions)
4 tsp reduced fat mayo
1 tbsp canola oil
1 lemon quartered

1. Combine potatoes, horseradish, shallot, mustard, garlic salt and pepper in bowl. Spread each piece of fish with 1 tsp mayo then top with 1/4 of potatoe mixture, pressing mixture onto the fish.
2. Heat oil in a large nonstick skillet over med/high heat. Carefully place fish in pan potato side down and cook until crsipy and browned, 4-5min. Gently turn fish over, reduce heat to med, and continue cooking until the fish flakes easily with a fork, 4-5min more. Serve with lemon.
