1/3 cup butter or margarine
1 cup sugar
1 egg
1 tsp vanilla
1/2 (20 oz can) crushed pineapple, not drained
1 cup flour
1/2 cup whole wheat flour
1/2 tsp salt
1/2 tsp baking soda
1 cup shredded coconut

1. Combine ingredients in order given, one at a time, mixing well between each addition
2. Pour batter into a greased loaf pan
3. Bake for 1hr at 350º or until toothpick inserted in middle comes out clean
