4 Veal loin chops
1/4 tsp. salt
1/4 tsp. pepper
3 tbsp. butter or margerine
2 tbsp. minced shallots
2 cloves garlic, minced
3/4 cup white wine (so dont drink the whole bottle before adding this)
3 oz. Brie cheese, rind removed
1/4 cup whipping cream
1 tsp. cornstarch mixed with 1 tsp. wter
1/4 cup minced italian parsley

1. sprinkle veal chops with salt and pepper
2. saute in butter until brown on both sides, and just cooked through
3. remove from the pan. transfer to a heated platter. cover to keep warm
4. add shallots and garlic to leftover butter in pan. saute for 3-5 minutes or until soft
5. add wine to pan. boil until reduced to 1/3 cup. add brie cheese. stir continuously until melted.
6. add cream. cook for 2-3 minutes until very hot and bubbling
7. add cornstarch and water mixture to sauce. stir until thickened
8. pour sauce immediately over veal chops and sprinkle with parsley
