2 tbsp. Olive Oil
1/2 Large onion, chopped
1 Clove of garlic, minced
3 Pieces of Italian Sausage, removed from casing
1 Lb. Italian Sausage cut in small pieces
4 c. Homemade Tomato Sauce or any good brand of Tomato Sauce
1---28 oz, Can Crushed Tomatoes
3 tbsp. Tomato Paste
1 tsp. Italian Seasonings
3 or 4 Fresh Basil Leaves

In a large pot, heat olive oil until hot. Add onions and garlic, cook until translucent. Remove from pan and set aside. Brown loose sausage in pan until brown. Remove from pan and put with other ingredients. Brown whole pieces of sausage until brown and remove and put with other sausage and onions. Add tomato paste to pot and cook for a couple minutes. Do not let it burn.
Add tomato sauce and can of crushed tomatoes. Stir well to blend. Add all other ingredients to the gravy. Add seasonings, salt and pepper to taste. Bring to a boil and then lower heat to a simmer for about 1 hour. Serve over you favorite pasta.©
Makes 2 to 3 quarts of gravy.

If you cover the pot with a lid, the steam that builds up will make the gravy thin. If you prefer it to be a little thick, then leave the lid off.
In an Italian house, tomato sauce is called gravy. If you are not Italian, most others call it sauce.
