3 ripe peaches, peeled and pitted
2 tbsp. sugar
1tbsp. cornstarch
2-1/4 c. all- purpose flour
3/4 c. sugar
1/2 tsp. baking soda
1/2 tsp. baking powder
3/4 c. butter
3/4 c. buttermilk or soured milk
1 egg, slightly beaten

Chop peaches into chunks. Put in small saucepan. Sprinkle with 2 tbsp. sugar. Cook over medium heat and stir until bubbly. Add cornstarch to the juice and mix well till fully dissolved. Cook for a minute until it begins to thicken. Set aside.
In a large bowl combine flour and 3/4 cup sugar and butter to fine crumbs. Remove about 1/2 cup and set aside. To the remainder, add baking soda and baking powder. Combine eggs and buttermilk. Add to dry mixture. Stir just to moisten.
Spread 2/3 of the mixture over the bottom of a greased 10- inch spring form pan, making sure to touch the sides of the pan with the dough. Spread the peach mixture on top. Spoon remaining batter in small mounds on top of peach layer. Sprinkle reserved crumbs on top. Bake in 350 º oven 40-45 minutes until top is golden brown. Serve warm with ice cream! Delicious!

I got this recipe from the Standard many years ago. It is from Lynn Ogryzlo. It is just as good with other fruits such as plums, blueberries or apples.
