1 lb. gemelli pasta
1/4 c. olive oil
1 small onion, chopped
1/2 tsp. crushed red pepper
1 lb. spicy {or mild} Italian sausage, casings removed.
1/2 c. reduced-sodium chicken broth
1 mini cube of Knorr's Chipotle seasoning(bouillon)
1/2 tsp. each paprika, onion powder
1/4 tsp. each cayenne & black pepper
1/2 c. heavy cream
1/4 tsp. nutmeg
2 bags (5 to 6 oz. each) Baby Spinach
Grated Parmesan

1. Bring 5 to 6 qt. pot of salted water to a boil. Add pasta; cook as pkg directs.
2. Meanwhile, heat oil in 10 to 12 -inch nonstick skillet over medium-high heat. Add onion; sauce 2 mins or until just beginning to brown. Add sausage and cook, crumbling with a spoon, until browned, about 4 mins.
3. Mix chipotle mini cube seasoning, paprika, onion powder, cayenne & black pepper into chicken broth; stir into sausage mixture, stirring to dissolve any browned bits. Stir in cream and nutmeg; simmer 1 min. Remove from heat.
4. Place spinach in colander; drain pasta over the spinach [spinach will wilt]. Return pasta and spinach to pot; toss with sausage mixture. Serve with grated Parmesan.

This dish has a kick. If you want it less spicy use Mild Italian sausage and don't add the Chipotle bouillon cube.
