3-4 Chicken breasts/thighs (dice and sauté) Season with garlic salt and chili pepper to taste
1 onion
1 bell pepper diced
1 jalapeño seeded and diced
2 cans diced tomatoes
2 cans corn
3 cans black beans
1 cup of diced okra if available
Chopped cilantro

Directions:
After sautéing chicken (season while cooking), onion and jalapeño add all the other ingredients into big pot (except cilantro) without draining. Add a little water if needed to bring to a boil. Continue to season with garlic salt and chili pepper to taste. Be careful not to overseason because beans can be salty since they haven’t been drained. Add cilantro at the end when everything has been heated through. Serve over white/brown rice or add to tortillas and make tacos. Serves 4-6, two bowls each with leftovers.

Can adjust quantity of any ingredient to suit your families tastes. We like corn so we typically add an extra can of corn. You can add additional ingredients to original recipe/leftovers. It’s a very flexible recipe.
