1 c chopped celery
1 c chopped onion
1/4 c margarine
2 c chicken broth
2 c beet broth
1 tsp baking soda
1/4 c cornstarch
1/4 c water
1 1/2 c sauerkraut
4 c milk
4 c chopped cooked corned beef
2 c shredded Swiss Cheese
salt to taste
pepper to taste
rye croutons (optional)

Directions:
Directions:
Saute' onion & celery in margarine until clear.

Transfer to slow cooker. Stir in broths & baking soda.
Combine corn starch & water in a cup & add to the slow cooker.
Stir in sauerkraut, milk & corned beef.
Cover & cook on high 4-5 hours.
Stir in cheese & cook 30 minutes.

I use 1 bouillon cube per cup of water for the chicken & beef broths.
Soup can be made in a Dutch Oven on top of the stove too.
