1 lb. lean ground beef
2/3 cup evaporated milk
1/3 fine dry bread crumbs
1/4 cup catsup
1 1/2 tsp. salt
2 tsp. Worchestershire sauce
pepper
3 potatoes
3 onions
3 carrots
2 tsp. dried parsley flakes

Directions:
Mix ground beef, milk, bread crumbs, catsup, 1 tsp. salt, Worchestershire sauce, and 1/4 tsp. pepper in a mixing bowl. Shape into a loaf and place in center of a 9x13 pan. Peel potatoes and onions and slice 1/4 in. thick. Scrape carrots and cut into quarters. Mix parsley, 1 tsp salt, and dash of pepper. Place vegetables around meat loaf and sprinkle with seasonings. Cover lightly with foil. Bake at 375º for 1 hour or until vegetables are tender. Uncover and bake for 10 minutes longer.
