1 pkg (12 oz) JUMBO pasta shells
4 c. (32 oz) ricotta cheese
8 oz. mozzarella cheese, shredded
1/2 c. parmesan cheese, grated
2 eggs
1 T. parsley
1/2 tsp. salt
1/4 tsp. pepper
1 jar (32 oz) spaghetti sauce

Cook pasta, drain. DON'T OVERCOOK OR THE SHELLS WILL BREAK AND WILL BE TO HARD TO STUFF. Rinse well with cold water, drain, and arrange in single layer on a plate to fill.

Meanwhile, mix together cheeses, eggs, and spices. Fill cooked shells w/ cheese mixture. Cover bottom of baking dish with some of the sauce. Arrange filled shells in single layer in the pan. Pour
remaining sauce over shells and bake at 350 for 30 minutes or until hot. Sprinkle w/ additional parmesan cheese if desired.
