3 Whole Chicken breasts
water
salt

1 c. chopped onion
2 T. butter
2 cans petite cut tomatoes
1 can tomato sauce
1 can Rotel tomatoes
1 tsp. sugar
1/2 tsp. salt
1/2 tsp. Italian seasoning
12 flour tortillas
2 c. Monterey jack/ Colby cheese
3/4 c. sour cream

Directions:
Directions:
Cook chicken in pressure cooker with water and salt. Save broth. Shred chicken when cooled.

In saucepan, cook onion in butter. Add tomatoes, sauce, Rotel, and spices. Bring to a boil; reduce heat and simmer 20 minutes.

Dip tortillas in chicken broth to soften, add shredded chicken and palm full of cheese. Fold sides in, then top and bottom of tortilla, then place seam side down. Blend sour cream into tomato sauce mixture, then pour over tortillas and sprinkle with remaining cheese.

Bake at 350º. Heat until bubbly, about 15 minutes.
