Ingredients: 1 bag of taco chips, mild or strong flavour cooked and chopped whole chicken breasts (1/2 breast per person) 1 tin condensed chicken and rice soup 2 cups grated medium or sharp cheese 1 jar salsa (I use 2 jars)

Directions:Crush taco chips in their bag and place chips in bottom of greased 1-quart casserole dish (I use Pam spray). Sprinkle layer of cooked chicken (I saute with garlic and olive oil, and pepper) over chips evenly, and then pour chicken and rice soup over top of this. Sprinkle layer of cheese over all, and then pour salsa over top of this. Add another layer of cheese. You may do numerous layers or a few thick ones...either way... so delicious. Bake at 350 for 45 minutes and serve with an interesting salad, garlic bread or buns, and avocado halves make an nice compliment!!!! A real hit for company... serves 6 polite people, or 4 people who really like to chow down... cheers!!!!! I times this by 3 and take it to the lake, very delicious cold the next day for lunch with more salsa!!!!! |

Notes: Real comfort food, filling, delicious, and always loved by everyone, young and old... a great pot luck dish, or looks exquisite served in individual casserole dishes for an fancy dinner party. Has interesting Mexican flavours. Also may have sour cream on hand for extra richness!!!!
