4 large potatoes
1 cup sour cream
1/2 cup milk
4 Tbsp. butter
1/2 tsp. salt
a little pepper
1 cup shredded cheddar cheese, in halves
8 scallions, chopped and separated in half
chives

Directions:
Directions:
Bake potatoes at 350º for 1 hour. Cool 10 minutes. Slice in half, harvest potato filling, and mix the flesh with all but half the cheese and scallions. Spoon back into the potatoes and top with the cheese and scallions. Bake 15 more minutes.
