2 c. milk
2 c. quick oatmeal
1 stick butter, melted
2 eggs, beaten
1 tsp. vanilla
1/2 c. sour cream
3/4 c. all-purpose flour
1/4 c. sugar
1/2 tsp. salt
1 1/2 tsp. baking powder
1 1/2 tsp. baking soda
1/2 tsp. cinnamon
Pinch of nutmeg

Warm milk in the microwave until very warm but not boiling. Remove from the microwave and add the oatmeal; stir together. While you are doing this, melt the butter, again using the microwave. When the butter is melted, mix it into the oatmeal/milk mixture. Let this mixture stand for 15-20 minutes, stirring occasionally.

Beat the eggs in a medium-size mixing bowl and stir in the vanilla and sour cream until everything is well mixed. Set aside.

In another bowl, sift together the dry ingredients. With a large spoon, stir the egg mixture into the dry mixture.

Finally, add the oatmeal mixture, stirring until combined thoroughly but do not over beat.

Use about 1/4 cup of batter for each small 5-6" cake. Pour the batter onto a hot griddle and cook on medium-high heat until bubbles begin to form on top of the pancakes and the edges begin to turn brown. It should take about three minutes. Flip the pancakes to other side and cook for another 2-3 minutes.

Serve the cakes warm with butter, warm syrup or preserves.

For an added "something good," stir in finely diced or thinly sliced apples, fresh peaches, bananas, blueberries, raspberries or chopped pecans to the batter just before cooking.
