12 oz hash brown potatoes (thawed)
½ cup melted butter
2 cups Monterey jack cheese (shredded)
2 cups cheddar cheese (shredded)
2 cups diced ham
½ cup finely diced onion
6 eggs
1 cup milk
Salt/pepper to taste

Directions:
Directions:
Spray 9x13 pan with Pam. Press hash browns on bottom. Drizzle melted butter over and bake 25 minutes at 350 degrees. Beat eggs; add ham, milk, cheese and onions. Pour over potatoes and bake 30 – 35 minutes (until set) at 250 degrees.

I always serve this with banana oatmeal muffins and canned fruit (like peaches or pears). You could serve it for breakfast, too.
